Microwave Monday: Ravioli Casserole

If there’s one thing I love, it’s a good casserole.  Unfortunately, up till now, all the casserole recipes I’d ever made required an oven.  But no more!  The microwavable ravioli casserole has arrived and it is fabulous!

Here’s what you’ll need:

1 pound lean ground beef
¼ cup chopped onion
2 cans beef ravioli (Chef Boyardee does just fine)
1 cup shredded mozzarella
Oregano, garlic salt, and pepper to taste


1.  Crumble beef into casserole dish and add onion.  Sprinkle oregano, garlic salt, and pepper to taste.  Microwave 5 to 6 minutes, pausing at 3 minutes to stir, until beef is no longer pink.

2.  Drain excess liquid.

3.  Stir in ravioli and cover with wax paper.  Microwave another 5 to 7 minutes.


4.  Sprinkle cheese generously, cover, and wait until cheese has melted to serve.



Feel free to add panko breadcrumbs after you’ve sprinkled on your cheese, and microwave for another 30 seconds to give your dish a little extra something!

Cost Breakdown:

1 pound lean ground beef:  $6.59
¼ cup chopped onion: $1.29
2 cans beef ravioli:  $3.90
1 cup shredded mozzarella: $3.19

The total cost of groceries for this recipe (with tax) is about $17.  And while we are using all the ingredients purchased, this makes four servings which is about $4.25 per serving.  So whether you’re sharing this with friends, or planning for the week, you definitely get a lot of bang for your buck!
