Microwave Monday: Chocolate Cake

By Lauren Sharkey

Just because you don’t have an oven in your dorm room doesn’t mean you can’t still make yourself some decadent desserts.  All you need to make this chocolate cake is a coffee mug and a microwave!

Here’s what you’ll need (makes 2 servings):

4 tablespoons self-rising flour (can be found at any supermarket in the Baking Needs section)
4 tablespoons sugar
3 tablespoons vegetable oil
3 tablespoons milk
2 tablespoons unsweetened cocoa
3 tablespoons mini chocolate chips (white, milk, dark, or all three!)
1 egg
1 splash vanilla extract
1 coffee mug (unless you’re feeling generous and want to make another for your roommate!)

1.  Mix all your dry ingredients together in the mug before adding the egg.  Then mix in the milk and oil.

2.  Stir in chocolate chips.

3.  Divide batter INTO TWO CUPS and place each mug in the microwave and cook for 2 1/2 to 3 minutes SEPARATELY.  (Don’t get scared if you see the top of your cake puff over the mug – it’s totally normal lol).

4.  Once it’s done, let cool for a moment and enjoy!  I like to take a butter knife and run it around the mug, put the cake onto a plate, and drizzle chocolate sauce on it!

You can eat this delicious dessert straight from the mug, or plop it onto a plate.  Also feel free to top it with some ice cream, whipped cream, fresh strawberries, nuts, and/or chocolate sauce!
